
Vegan Gluten-Free Banana Oat Blender Muffins

These vegan gluten-free blender muffins are super easy and so tasty. Made with bananas and oats, they are healthy enough for breakfast!

What you need

cup blanched almond flour

tsp baking powder

tsp cinnamon

tsp ground clove

tsp salt

cup ripe banana

cup maple syrup

cup milk

tsp apple cider vinegar

cup walnut pieces

coconut sugar
Instructions
1 Preheat oven to 350 F/ 175 C. 2 Put flours, baking powder, cinnamon, cloves and salt in a bowl. Whisk well to remove clumps and combine. 3 Add banana, maple syrup, milk, and apple cider vinegar into a blender and blend until smooth. 4 Add in dry ingredients and pulse until well mixed. 5 Add walnuts and pulse to chop in. 6 Pour into a prepared muffin tin (I use a little coconut oil spray and rub it around). 7 Bake for 24-25 minutes.
