I like making these sweet sesame noodles with tofu and broccoli because they are quick, filling, and simple to make. Tender noodles, crispy tofu, fresh broccoli, and a savory sesame sauce come together in one delicious bowl. I love that I can have this ready on the table for my family in 30 minutes and works fantastic for lunch or dinner any day of the week.

What you need

tbsp dark sesame oil

tbsp low-sodium soy sauce

tbsp creamy peanut butter

green onion

tsp table salt

tsp sesame seed

box extra firm tofu

tbsp rice vinegar

clove garlic clove

tsp ground black pepper

tsp ground ginger

tsp red pepper

tsp brown sugar

oz soba noodles

head broccoli
Instructions
0 Bring a large saucepan of water to a boil. Add soba; cook 3 minutes. Add broccoli to pan; cook 3 minutes or until soba and broccoli are done. Drain. 1 Coat a large pan with cooking spray. Add tofu to the pan, saute on each side until each side is browned and crispy. 2 Combine vinegar, sesame oil, soy sauce, peanut butter, 1 teaspoon sesame seeds, sugar, crushed red pepper, ginger (if using) and garlic in a large bowl, stirring with a whisk.
