What you need

tbsp extra-virgin olive oil

oz black beans

tsp ground coriander

tsp red chili flakes
tbsp lime juice

red onion

tsp ground cumin

oz canned diced tomatoes

cup fresh cilantro

tsp salt

bunch kale

cup vegetable broth
Instructions
0 Heat the oil in a pot and saute the onion for 3-4 minutes. 1 Stir in the garlic, cumin, coriander and red pepper flakes, statue for another minute. 2 Next add the black beans, diced tomatoes and vegetable broth. 3 Bring to a boil and simmer for 20 minutes, stirring occasionally to prevent the soup from burning. 4 Turn off the heat, using a potato masher mash the soup, crushing the black beans which will thicken the soup. 5 Turn the heat to medium and add the lime juice and shredded kale. 6 Stir the soup and bring to a simmer, cooking for another 10 minutes. 7 Adjust seasoning to taste and sprinkle in the chopped cilantro. 8 Serve immediately.View original recipe
