What you need

frying oil

cup vegetable broth

cup red pepper

cup shredded chicken

cup frozen corn

cup black eyed peas

tsp salt

cup cilantro
Instructions
1 In a pot, brown the rice with a drizzle of oil over medium heat until browned. This is optional but will up the flavor. 2 Add everything else into the pot, bring to a boil. About 5 minutes. 3 Reduce to medium low and cook covered for 30-35 minutes. Check and add more broth if needed so it doesn’t burn. 4 Remove from heat. Let stand for 5 minutes then fluff with a fork.
