
Healthy Black Bean Sweet Potato Tacos Recipe

These black bean sweet potato tacos are the perfect healthy meal for any night of the week. Easy to make and the flavor combo is unreal!

What you need

cup sweet potato

cup green onion

tbsp taco seasoning

tsp salt

vegetable oil

tbsp lime juice

flour tortilla

avocado
red cabbage

cup cilantro

cup raw cashews

tbsp apple cider vinegar

tsp garlic powder
Instructions
1 Preheat oven to 400 F/ 205 C. 2 Put the black beans, potatoes, green onions, oil/broth and spices on a parchment lined baking sheet and use your hands to mix so it’s all coated well. You could also do this in a bowl. 3 Spread the mixture out evenly over the baking sheet. 4 Bake for 25-30 minutes, until potatoes are crisp and cooked throughout. 5 When done, drizzle lime juice over the top. 6 Make sauce by putting all ingredients, except cilantro, in a blender and blend until smooth. Add cilantro and pulse to incorporate in. 7 Assemble tacos by putting a few spoonfuls of filling on a tortilla, then adding toppings and drizzling sauce over the top. Enjoy!View original recipe
