Preheat oven to 350 F (175 C). Put all ingredients, except the chocolate chips, in a bowl and mix well. Add chocolate chips and mix until incorporated. Drop spoonfuls of dough onto a parchment lined cookie sheet. Bake for 13-15 minutes. Cookies should be starting to crisp at the edges, but softer in the middle. They will cook more as they cool.
