What you need

cup water

cup white onion

cup shredded chicken

cup celery

clove garlic

tbsp tomato paste

tbsp dried mint

tbsp thyme leaves
tbsp dried oregano

diced tomatoes with green chilies

cup white beans

oz chard

cup cooked pasta

vegan cheese
Instructions
0 Saute onion over medium heat with ½ cup water and the bouillon until it becomes translucent, about 2-3 minutes. 1 Add carrots, celery, garlic, tomato paste, herbs and another ½ cup water. Saute until the carrots begin to soften, about 5 minutes. 2 Add diced tomatoes and the rest of the water. Bring to a simmer, about 7-8 minutes. 3 While the soup is cooking you can cook the pasta. 4 Add the beans and chard and cook a few minutes until the chard is wilted. 5 Serve with optional parmesan or other toppings of choice.View original recipe
