Instructions
1 Preheat oven to 450 F/ 230 C. 2 Put veggies on a parchment lined baking sheet. Drizzle with oil, sea salt, oregano, garlic powder and pepper and mix a bit to incorporate. 3 Roast for 20-30 minutes depending on veggie and how big they are cut. 4 Meanwhile cook pasta according to package directions. 5 Toss veggies with pasta and serve sprinkled with my vegan Parmesan!View original recipe
